Cardoon - Cynara cardunculus

Cardoon is a bold statement plant, with it's striking serrated leaves covered in prickly spines, and the beautiful thistle-like purple flower that emerges during the fall. It is an edible ornamental, and is related to the artichoke. Unlike the artichoke, the leaves are what is consumed. It prefers full sun and rich well-drained soil. It is a perennial in zones 7-9, and is considered by some to by weedy if left to spread unchecked.                     Also called: Artichoke Thistle, Desert Artichoke, European Cardoon, Scotch Thistle, Globe Thistle, Wild Artichoke
